I typically just leave one space uncovered, but yes. You cannot build walls etc on floors. However, it's not a big deal to simply deconstruct a few tiles to add walls etc.

Yep, Hit then [C] and build walls out of the material you think best. Then build an upward stairway from the same menu, once that is built build a downward stairway on the Z level above it and place floor from the same menu over the walls/interior to make a roof. Once finished the area is considered indoors, but is still light.

Actually you no longer get a Captain of the Guard or sheriff. You can elect one, but I usually deign not to, as imprisoning or beating a miner ( Nearly to death usually ) for a failed metalsmithing demand which he doesn't even have enabled is a bit harsh. The nobles will get angry if demands are ignored and nobody can be punished, but give them nice rooms and they won't drop below exctatic.

My last fortress had a massive outside castle complex made out of kaolinite, with a drawbridge moat and 3 layer thick/tall walls, I super-trapped the two grated narrow hallways with murder holes and a few well placed fortifications, making sure they were far away from my actual entrance and places where dwarves would be hanging around.

Then when I call all inside, the goblins hit up against traps that are outside so the dwarves won't go rushing out after their trash with all inside on, and the dwarves have no chance of getting injured from a stray arrow. The one downside is that I had to turn gather refuse from outside on to get the bodies where I wanted them.

But I never had a single loss to goblins or megabeasts during the fortress's 18 year span. Come to think of it, it was rather boring. Haha. I'll take death and mayhem any day, compared to an ultra-safe impenetrable fortress.

The guards don't seem to ever go insane. I've had 2 human guards sitting in my fortress from the last diplomat for over 3 years. They actually helped kill her when she went berserk.

Yeah, but he hasn't trained anything. There are no dogs as they instantly freeze to death upon entering the map. Only mules, horses and musk ox. All he's done is taken care of a few animals, and he's done that while in the military and still gaining skill levels/experience from it.

I recently drafted a ranger ( Animal training/caretaking/hunting ) to my Military force and went to work building my road, after some time I noticed " Soandso, Marksdwarf is more experienced " This would not naturally lead me to believe something was happening, except that i've yet to set up any archery ranges and he was drinking in the lounge at the time. I zoom over to him to see what's up, and as it turns out his animal caretaking has gone up 2 levels over the course of his military stay. Interesting feature if it's intended.

I also noted many of the animals that were victims of my ow.. er my Dwarves animal cruelty ( 6 story pit meet Mule ) standing around him in his Barracks.

This is a known bug, I believe Toady is working on it. It's also present in several other forged items.

I prefer to make my newest immigrants barehanded brawl all wild animals on the map to death until they clean it out for a season. Then, the ones who've survived to make Wrestler are allowed in. The rest starve.

I've had the jail save me more trouble than not. I actually gave my sheriff an adamantite hammer and trained him to legendary to deal with tantrumers after one beat his wife to within an inch of her life. One hit and they never tantrum again.

Nor do indoor crops, provided you have some loam or sand. Or on glaciers you can use the trick to make some loam.
