DF Gameplay Questions / First Game Questions

On my first game with some questions:
1} Reading the history of my starting dwarves all of them have the "like working outdoors". I would think some dwarves would like to be in the mines digging for gold. Was this just a fluke when I started my game or do all dwarves prefer the outdoors?
2} Why am I unable to browse into other parts of the world? When the world was created it was much larger yet once the game started I have limited traveling on the map. I know how to view different levels of terrain so that's not the issue. Could I be missing something obvious?
3} My biggest trouble is maintaining food and drink... any suggestions? (Yes, I've watched the youtube tutorials.)
