I believe that because there are 7 or so plains civs that you can generate a couple different entities, but I may be wrong.

This seems very interesting and somewhat fun.

In the errorlog:
Unrecognized Creature Token: LARGE_CHASM
Unrecognized Entity Token: PLAIN_SETTLEMENTS

The correct token is PLAINS_SETTLEMENTS (with an 'S').  I don't know about the other one.

For the former, add a new entity file for the creature with [INDIV_CONTROLLABLE].  If you want to give it skill points make sure that it has a civilization.  [PLAINS_CIV] is probably the best because you will have the greatest chance of getting a civ.  Be sure to generate a new world.

For the latter, you might be able to use third party software such as Cheat-O-Matic

This should all probably work.  I know that you attacks of 0 and the extract code is right.

Giant cave spider attacks go like this:
The giant cave spider bites you in the upper arm.
You feel numb!
and then that progresses to
You feel more numb!
You are partially paralyzed!
You are fully paralyzed!

If you remove the [METAL_PREF] from the entity file and put in [WOOD_PREF] all the equipment will be made from wood.  Actually I don't even think you have to remove [METAL_PREF].

Creatures will use their primary attack unless they are missing that body part or are using it to grab something else, in which case they will use their secondary attack.
