I really want to move my pasture animals underground so its easier to create a meat industry so my dwarves won't become plant eating hippies. Do I flood an area underground and wait for grass to grow?

I didn't know about dumping objects so I thought that you had to dig out an area to store the stone in, so I was creating these massive underground stockpiles for stone. I felt so stupid when I learned how to dump things, now stone management is a breeze.

What I would do is to create a dump area far away from your fortress and then set all other dump areas as inactive. Once you've done that you can then set all the corpses you don't want to be dumped. Once your dwarves have moved all the corpses you can then set them as forbidden.

Alternatively if you want to further put them out of sight you could always just dig a pit with a two block distance between it and a small pond. Then you dig a small channel beside it leading to the edge of the pond. Set the dump area to be in the channel and then then dig complete the channel leading to the pond so the water flows through and pushes the corpses in to the pit. After that you can just wall of the pit or leave it open, your choice. Since they're in the pit they can get out and kill your dwarves if a necromancer comes along.

I would have suggested that unless you need that area of your fortress for the next few seasons I would suggest setting the doors to the hall as forbidden passage after getting all of your dwarves out. All you have to do after that is wait for him to starve to death. Once that happens you can just bury him and get on with having fun :D. Also if it doesn't have doors just put in some walls to bar off the area.

Alternatively if you really need that area you could always just wall him in to a small area like vanetteveldt suggested. I would recommend wooden walls since wooden walls go up quickly, and put in a door for easy access after death(you can always just forbid it once you put it in place).

Currently I'm trying to stream line my industry. So far a lot of my miners have just been taking breaks whenever I assign new work :-[.

Besides that one of my dwarves was trying to create an Artfiact out of Metal Bars and Shells. I didn't have any shells so eventually she just gave up and started moping around. She slowly made her way to her bedroom which took about half a season. Once she was there she moped around until she died of starvation. This sucked since I would most likely had gotten an amazing bone or metal crafter out of that which could have boosted my trading.

After that happened I found out her husband hadn't found out about her death yet, when he went to take a nap in their bedroom he immediately became ecstatic upon finding her body. After that he immediately held a party where a single child attended and immediately became depressed. ???

Later on I assigned him to be a stone carver since it was taking quite a while to engrave the walls and floors of my work area. After that I found him creating carvings of her death. I don't know what to do with him but so far he hasn't made anyone else really depressed so I'll leave him be for now.
