They aren't hypocrites. To make wood crafts, dwarves kill a tree and carve crafts from it. Elves pick their trade goods like fruit.

My bowelf had the hunting labor enabled, but he didn't hunt anything till a sasquatch showed up, which he headshotted.

I always imagined elves got their wood the same way Night Elves did. They have some kind of magical thing that does it. Too bad you can't do that in DF... yet.
I've always pictured things as the elves collect the wooden items they refused to trade for from the fortresses and towns they have pillaged.  "Here, buy this instead of cutting down trees!  Its already been cut down, after all."

Clearly, elves who die naturally become wood. Which they then sell, because they can't eat it. yet.

If you play as elf, you should also preserve the life of any tame animal and adopt them as pets. Only wild animals, killed by a hunter or whatever may be eaten. Animals include other sentients, including elves.

IIRC, in one of Threetoes's stories (or stated by Threetoe himself), elves grow trees into furniture. Basically, you eat a leg of the chair tree, poop the seed and another chair grows. Must be painful to grow Enormous Corkscrews (imagine the seed).

EDIT: Nevermind, I just remembered. They use magic.

It's treated as completely normal because this is Dwarf Fortress.  There's absolutely nothing wrong with surrounding yourself with a wall of flames, only to later realize that you're surrounded by a wall of flames.
There's nothing that can't be solved by hurling fifteen roc birds at it.

Of course I can cut down trees, I'm a hypocrite elf! Although, I am using a training axe.
