   Its a fortress one guy made himself. It looks epic and even has a heartwarming story about a dwarf and an eagle. You should really go check its thread an look at the pictures there cause some are amazing.

A bit of a different Idea, but a very interesting idea nonetheless, would be to make the Tower of the Gods from Zelda Wind Waker

The terrain around the tower would be very simple.. and starting at sea level gives you plenty of room to build to scale.

   If we did the tower of gods one it would I think be fairly easy to Voxelsnipe a flatland map into an ocean map if we are able to use any map we need to on the server we have available. Simply a matter of turning the dirt into sand then placing a block at the ocean level you want and down fill with water from there as far as needed.

Edit: I don't know if the server we will be using has bukkit but with the CleanroomGenerator which I just found you can set what the layers of a map genned with it are so for instance you can have bedrock, 3 layers of sand, and then oh I don't know 7 layers of water if you wanted. This would be a lot better for the tower in the ocean type of thing as it would require no work to get that way.
   Of course with thought I realize that it may be better to just use one of the many oceans that seem to generate nowadays in minecraft for a more realistic bottom.

Edit2: I think we need more concrete information on the server we will be using then what we have right now. Looking back on the other thread its basically the planehacked server and if so it would mean a completely vanilla server. If so then most of my ideas are out the door as far as world stuff goes though the idea that our timelaspe would be in an actual server that is being used is neat.  Also if the map has not changed since my last time on then there is an ocean next to spawn if we decide on the water tower thing though I am really holding out for the dwarf fortress one.

Well, we'll have to leave some room for towers. Can we just gen up a world without much atwixt the surface and the bedrock? That way our mountain can be 200+ blocks high.

   I can easily gen a world like what you want Barbarossa, its just the question of if we could use the world on the server we have currently available. Anyway I did a test of a timelapse with the Water Shader and it looks slightly funky, you can see it here along with a void world and an ocean world.

yeah, the water shader doesn't work in that.

I mean, we could live without it, but it'd make it better if you can get it to work.

also, remember, if we're gonna make mountain hals, we gotta make it visible from the surface/wherever it's being filmed. we don't want the viewer to be staring at a hole in a mountain for however long the video is :P

   The underground problem is part of why I like Flarechannels. While it does have parts that are underground most of the really good stuff is above the ground. That and its awesome.
