Here's the thing: Mountains make great walls to hide from prying eyes. Hence comes this plan:

1. Timelapse views from outside.
2. Some people are tasked with building massive towers and carving external features and whatnot. Perhaps a causeway to the gate? The sky is literally the limit.
3. A different group hollows out a mountain and creates a huge underground city. Another camera could be in here, but nothing is shown until completion.

Hoped-for reaction:
"Huh, a mountain fortress. That's cool."
"Wow, that looks great!"

Another idea, from zelda again.

The Arbiter's Grounds. Very desert-themed.

Spoiler (click to show/hide)

A ruined coliseum in the desert. the back half is dug into the mountain. the picture is basically all you need. instead of being  an open air coliseum, it has a roof which doubles as another stadium. more info can be provided if necessary. TLoZ is my secret shame.

No shame in Zelda stuff. Anyway while I like all the stuff so far I think the first timelapse we do should be something innately DF. Also since I have not fawned over Flarechannels enough yet today, I like all the colors it has in the design. The Arbiter's Grounds is nice but very sand colored and I want something big and brightly colored for the first build so that it stands out well.
Another thing I was thinking of is that we will need some kind of background music for the timelapse. What I think we should do is make the video and then make a thread in the creative projects forum area asking for someone to make a soundtrack for the video so we can say everything in the video was a Bay12 effort.

Okay, last suggestion from me :P
http://wallpaperswide.com/fantasy_world_4-wallpapers.html

although this isnt so much dwarfy, it is quite the spectacle. and colors can be varied, i do agree the Arbiter's grounds are quite.. sandy..

As for background music, I suggest Dwarf Fort's theme on piano compliments of Sirroco

With camera studio, you can do moving timelapses so the camera can move around in a preset path. I might be able to get a second minecraft account to do the filming and for me to build at the same time. (Win!)

So in. I've been meaning to get myself building again. We are going to be spawning resources, right? Right?

I am going to say without any authority other then my own that once we have 5 actual options to choose between is when we will set up the poll. If we just let it set then it will never get started.

I think, if any time, we ought to set up the timelapse on a weekend for the simple reason of more people being able to get online (unless everyone stopped having weekends off, in which case, F!*£)

Weekends, there's no other time Europeans and Americans can play other than before Monday and after Friday.

But yeah, we really need to put up poll options.

Just going to put out there that while the weekends are generally more convenient we don't have to do the build in one straight shot and in fact probably will not be able too. If we can manage to get more people on for say 3 or 4 hours on some weekday then having a 3 or 4 hour session would be better then having some kind of straight shot with only a few people.

Edit: I also did some testing on the Water Mod and there is no way to remove the refractions and that is what makes it look like junk.

There are some, anyway the following times are EST. I have collage on Monday/Wednesday at 1pm to 3pm and on Tuesday/Thursday at 11:20am to 12:50pm so those days I would not be available until 5pm because of various things though T days I could potentially be available as early as 3pm. Friday/Saturday is basically free though I don't wake up till late and my dad occasionally gets me to do stuff so with warning the days should be free or I can say if they are not. Sunday I do stuff till 6pm and get home at 7pm. Any day after about 9 or 10pm on till 3am I am totally free.  Anyway once again the times are EST.
