Is it really fair to limit skills to novice if not done competatively/professionally?  Some amatures can be very skilled, and entering a competition doesn't magically make you better.

While there are exceptions to every rule, in my experience people who do a task for a living or competitively are almost always better at it than people who just do it for a hobby or just on the side.  I cook for myself, but I can't cook nearly as well as a professional chef.  That sort of thing.

That being said, the rule is mostly a guide.  If you are dedicating several hours a day towards a task, it's reasonable to claim a decent amount of skill in that task.

Me?

Talented Fighter (Multiple martial arts)
Novice Dodger (I dodge. I don't block. It's much smarter.)
Novice Knife User (Actually, they're Sai. But close enough.)
Adequate Spearman (Kobudo, the bo skills are heavily applicable as spear skills)

Talented Striker/kicker (Rusty) (It's been some years since I learned Tae Kwon Do, but I was halfway to black belt. I'm recovering my skills, though)

Dabbling Engraver (Technically engravings/etchings onto wood, but I'm not a woodcrafter.)

Dabbling Carpenter (I enjoy carpentry.  So far, though, mostly boxes.)

Competent Engineer (This is my job. I'm about a month from being fully qualified, but I do have real-world experience. I have skills in multiple engineering fields, so rather than picking mechanic/pump operator/etc I lumped them together)

Novice Cook (I cook for myself, every day. I've gone out for dinner maybe twice this year.)

What's wrong with using magma? That's almost always the easiest method.
I have issues channeling it properly to do that method. I end up flooding the fortress with magma.

Competent Swordsman -SCA
Skilled Axeman -SCA and throwing axe tourney :D
Skilled Thrower - same as above
Competent Armor user- SCA
Competent Striker - boxing
Proficient Fighter -Did alot of martial arts ranging from Kando to SCA as well as boxing
Adequete shield user- SCA my sheildwork sucks though
Novice Metalsmith(Rusty)- made my own forge and did shit with it back when i was 18
Expert student- I graduated valedictorian of my college class =D

My uses in dwarf fortress would either be soldier or psychiatrist(said to ignore social skills)

Adept ambusher - I always appear soundlessly behind people when they least expect it.
Competent observer - Spotting wildlife and lost items.
Legendary +1 reader - So I've had a lot of practice.
Adequate glassworker - I make unmanly but acceptably pretty fused glass crafts.
Dabbling wound dresser - EMT training, never used it.
Dabbling butcher - I've had my hand all the way up a chicken.
Dabbling leader - For reasons I do not fully understand, people always look at me like I'm supposed to be in charge.

novice metal worker (hobby that I sing entertaining)
novice furnace operator (scrapping copper, tin, and aluminium is fun)
dabbling jeweler (less jewels, more metal rings. mostly copper, no heat used either. just put the copper on a metal bar and beat the crap out of it with a ball hammer.)
adequate lier (you need to be a lier to get around these days)
novice glass worker (hobby, mostly bead making and crappy bottle blowing)
skilled bowman (SCA, like spaghetti)
skilled organizer (2.5 years working in retail as a cart pusher)
adequate negotiator (.5 years working in retail as a salesman)
legendary hauler (2.5 years working in retail as a cart pusher)
legendary reader (okay, im exaggerating, but I collect books and read LOTS. nothing better to do.)

Dabbling Swordsdwarf (V Rusty) - did fencing for a few months a while back, but gave it up.
Adequate Cook - I bake. A lot.

Adept Alchemist - I'm a degree level chemist specialising in the synthesis of compounds based on precious metals. The definition of an alchemist, I believe.
Novice Brewer - we make a lot of fruit wines at home.

Dabbling Cook - It's not that I don't have the practice, I just plain suck.
Dabbling Cheesemaker - I've been playing around with cheese and yogurts for a while with my friends, with some limited success.
Talented Mechanic - I've been a IT guy for the last ~8 years, going from everything from network management, web development, computer repair, system sales and service, data recovery, etc.
Adaquete Writer - Part of the joys of the IT industry, especially for a contract jockey like myself, is writing notes that the next poor fool can make sense of. Without all that jargon junk.
Adaquete Carpenter(Rusty) - I spent several years working on the job with my step-father, who's a contracter professionally.
Proficient Hauler(Rusty) - See above.
Novice Swordsdwarf(Rusty) - Too much of my youth spent around the SCA, and the Clinton War every year doesn't help.
Novice Bowdwarf - I prefer grouse hunting with a bow, as it makes less noise and you're less likely to startle multiple birds.
Dabbling Architect - In the loosest of terms. I'm a hobbyist inventor, and I have several different projects on the go(None of which are completed, because I hate dealing with Windows Embedded and input devices. Key sign of a bad inventor, loves to complicate things :p)
Novice Fisher - I've learned enough tricks of the trade to have spent quite a few summers smoking fish at least once a week(Plus, it's the only way to get the kids to leave me alone on my day off)

He is often nervous. He is very comfortable with social situations. He is very friendly. He is relaxed. He is bored with reality and has a wonderful imagination. He loves new and fresh ideas. He revels in chaos and Disorder. He is very disorganized. He possesses great willpower, but is tempered by a great apathy for things he doesn't see as important. He likes working outdoors and grumbles only mildly at inclement weather.

Dabbling bowyer (rusty): I made myself a bow a while back, then promptly got it stuck 30 feet up in a tree. Don't ask.
Novice ambusher: My siblings and I often have mock wars in the woods behind my house, and I focus on avoiding detection while picking them off one by one.
Adequate herbalist: When I was young, my grandmother tought me what local plants were edible, and I've been adding to my knowledge of them ever since.
Novice metalsmith: I built a small foundry for aluminum two years ago, and have been using it to turn all my old cans into useful things.
Expert reader: Books are my true passion. I read The Lord of the Rings Trilogy at age four, and now have a small library of rare or out of print books (Earth Abides is my personal favorite, it reminds me a little of dwarf fortress).
Cave Adapted: I don't get outside much, because I have had bronchitis so many times that it has permanently crippled my lungs. Since I live in a forested area, being reclusive is really the only way to escape the pollen during the spring and summer. On the bright side, it means I have more time to read.
Skilled swordsdwarf: I tought myself a dirty version of fencing, where the goal is to hurt your opponent as much as possible without getting hurt in the process. If a man is going to carry a *ashen training sword* (AKA a proper gentleman's cane), eventually some fool will decide you have money and try to mug you. That's when you jab him in the throat or kidneys.
Skilled dodger: Same reason as above.

So, you're an internist, but performed some surgeries as well? An amateur surgeon with no medical knowledge in real life sounds... dangerous.

As for my skills:
Dabbling cook - Just enough to prevent me from starving.
Novice brewer - As a child I helped my uncle brew schnapps. And I brew my coffee every day :P
Adequate consoler/pacifier - People call me a shrink without a license.
Adequate animal caretaker - Growing up with 7 dogs sure did help here!
Novice wound dresser - First aid class and some practice at mother's ordination.
Dabbling soap maker (very rusty) - Learnt how to make soap at chemistry class in elementary school.
Beyond horrible judge of intent - Judgement of character is something I always get wrong.
