I never could figure out how to name my Fortress manually.

(r)andomly pick things until something  suits your fancy.

I let the RNG have fun when I'm futzing with something random.  But if I'm digging in for a while, I deliberately name it something badass, ridiculous, or ridiculously badass, making sure that there's something in every possible slot.

The dorfs themselves I just keep hitting random until I get a name I like unless I'm doing something very specific.

Depends on what I am trying to do.  Mountanhome attempts usually get Boulderpools after the first vampire king I ever encountered (1000+ years old and ruled since year 1).  If I am running a dead civ fort it usually gets named with something appropriate.
otherwise I play (r)oulette until I find something that strikes my fancy.

I tend to go with either "The Greater Council" or "The Axe of Autumn" for groups, with seasonal variations when I feel like doing something else, with names either RNG'd or based on my goals. a few favorites I have that i reuse
