It sounds like you're making a 2d game, so I'd want to run it at 2880x1800.  A scalable UI would be nice, but I realize those are kind of a pita to program.  I'd still suggest it because I think we are going to be seeing a lot more screens with higher PPI in the future.  Changing resolution is a rather poor way to change the size of things.  I'm obviously in a very small minority now, but I'd recommend future proofing.  That's what I intend on doing with my projects.

I run one screen at 1280x1024 and the other at 1440x900 (widescreen).
Oddly, I have the same setup at work as well.

It really depends on the game. My moniter goes up to 1440x900, so that's what i have it as on the desktop and on any games that aren't as graphically demanding (or as high as i get the resolution in that particular game, anyway). However, if a game is graphically demanding, or even just a bit more of a hog than most games without being that demanding, most of the time i put it down to 1024x768, or even 1280x768 since my moniter's a widescreen.

Speaking of, you might wanna put 1440x900 on the poll there.
