Shallow metal shows up close to the surface, sometimes right below the soil layers. Deep metal is, well, deep. Have to dig down further to get to it. Wiki says shallow metal is "-3 to -61" and deep metal is "-17 to -61" layers below the surface. As far as I know, any ore can show up as shallow or deep, but don't quote me on that.

I generally think the good stuff, namely iron ores, are usually shallow metals.

Also perhaps take a look at "sedimentary layers" (rock, rock layers) in the wiki. Sedimentary layers have good ores and sometimes coal, and are usually shallow, in my experience.

For my current fortress, my shallow metals are a lot of limonite, magnetite and some rare gold nuggets.
My deep metals are tetrahedrite and cassiterite.
