How quick do things air drown?
In a dozen of steps really. It will be dead before dwarf even gets a job assigned.
edit: Okay, these orcas really are getting on my nerves. Yet another one has suicided after all that hassle I had to get through in order to get him to chain. They're not even trying to get to meeting zone. They just rush in seemingly random direction.

I don't know why it took so long, and my solution may not be as "dwarfy" as some might say, but I have a rather simple one. [CREATURE TAGS] can all be modified post-world-gen. Therefore, simplest way would be to first make sure that the training targets are the only members of that species on the map after caging some. Then, save and exit so you can edit the raws. Just change [AQUATIC] to [AMPHIBIOUS] or such, to allow it to breath air. Relaunch DF, train until you get domestics(as well as fending off any attacks from the newly land-based creatures) place members of the creature species back in cages, change back to [AQUATIC] and then drop em in a pool. BAM! Now you have pet sharks.

You seem to be under the impression that we're playing some game other than dwarf fortress. It doesn't matter how powerful you make a creature, we will find a way to destroy it. God is dead, and Urist killed him.

That kinda defeats the point if we just mod it, other than trainable tags, to be possible. We only advance when we use science to make nature our bitch.

Maybe you could remove the [BEACH_FREQUENCY] token. It's not needed for the experiment.

I am trying to make chickens lay bees as eggs. So far it only produces a single "Tame Small Creature" when a hen lays bees.
Honestly at the time, I didn't see what could go wrong with crowding 80 military Dwarves into a small room with a necromancer for the purpose of making bacon.

Alright, I have domestic orca now. As Tirion said training parents is unneeded, moreover it's outright harmful for the purpose.
You see, animal child becomes domestic immediately after it receives training. And if it's born from trained mother you can't train them in cage.

So here's setup:
Spoiler (click to show/hide)

I'm keeping wild momma orca in a single tile reservoir and when babies pop out I open the door to trapped and flooded tunnel.
Momma used to be trained, so she's trapavoid now, furthermore she isn't interested in leaving her initial tile anymore.

Kids don't move around much either but still some of them get caught, also stray 6/7's move them around quite a bit for additional catch.
After all traps are triggered, I close the door and open floodgate for dwarves to reload the cages. Specimen are stored in nearby stockpile.

So, I wasn't in a hurry to retrieve last batch of offspring and as a result I got a mixed group of grown up and child animals.
I've just assigned them all to be trained and forgot about them for some time. A couple of mature females have given birth while in cages, so I've decided to wait and see if they'll get domesticated while in cage they did not as of now. Trainers just wouldn't schedule trainings for them. So now I have three semi-wild orca calves.

And then there's Nikki, a domestic killer-whale.
I've noticed her when selecting a test subject for yet another unsuccessful attempt to arrange a comfortable meeting between a dwarf and an orca.
She's alone in her cage. She's older than the cage-born calves. That means she's the daughter of the momma orca and received her first training shortly before becoming adult.
Then I've run second test with next bunch of calves, and yes, being trained while still a child is all that needed for domestication.
Spoiler (click to show/hide)

I haven't succeeded with training zones yet but maybe large predators will be aggressive enough even without training. If not I'm going to wait for some fish that actually values its life first or do what Sutremaine said. They'd still need [trainable] tag added to them anyway.

Excellent work Di!

Not enough undead for my tastes, but still excellent!

And thanks for proving that babies born wild can be domesticated. For some reason I had had the impression that if a creature was ever fully wild, it couldn't be.

how close does a dorf have to be to an animal to train it?

since pumps draw water out of a tile faster than the water can flow into it, you could use a line of pumps down the middle to half fill a room, the same way you would to dam a river. the risk here is that currents may pull the sharks into the drained squares, leading to dead sharks.
i remember that someone else had a meeting room where the meetings were conducted through a fortification. the 3 tile room was built first, and then a fortification was constructed in the middle. it was still considered a room for the purpose of conducting meetings, but no one could walk through the room
so if you build fortifications in the pump draw squares, the sharks couldn't move out of the water, but the animal training zone covers both the wet and dry sides. pit the sharks in the wet part, the get a dorf to train them from the dry part.
there may be problems that the dorf can't path to the shark, or get close enough to train the shark.

another thought is; if you have a aquatic animal in a square that repeatedly gets filled and emptied of water, does the animal still air drown?

and if all else fails, zombiefy the sharks. stops them drowning in air, though there may be side effects.

What if you put a grate on a pit, a shark on the great, and pump a constant waterfall on the shark.... Willi it air drown?

Well, before my fort started crashing for no apparent reason I've been trying putting orcas into aquifer. Even if you abstract from them constantly crawling out and trying to get to map edge (or maybe a beach?) that didn't work very well. They get moved by water, a lot. Nor ropes, nor grates, nor bars stop that.
Also, flooded fortifications don't prevent creatures from moving through them.
Probably something with diagonal tiles will work.
If animal gets into safe tile, drowning timer resets.

NEVER

Has anyone tried vampiric/ghostly animal trainers yet?

What if you put a grate on a pit, a shark on the great, and pump a constant waterfall on the shark.... Willi it air drown?

Another good idea. As long as you have enough pressure, this should be doable... I think. How much overflow is there when you drop water onto a grate?
