Worth a shot I suppose. How do I disable human caravans? Disabling wagons would be optimal but just the human caravan will do for the moment.

Yes, but you wont get wooden multi-tile creatures, but 1-tile creatures that act like any other animal. Their body is "wagon" and 4 "wheels", but thats just their legs. ^^

So there isn't way to mass-produce wagons outside of trade caravans? Arrow-shooting tanks sound incredibly dwarfy.

Fake wagon-like creatures, yes. Real wagons, no.

In masterwork DF you can mass produce (or buy) turrets, which are immobile, can be pastured where you want them, and shoot at enemies... either bullets, flamers, webs or acids.   Automated fort defense.
