I have a noble dwarf asking me to make hourglasses, but I cannot find the workshop to do it in. Anyone know which one to use?

Also, any other really obscure items that your nobles dwarves have asked for, and their respective workshops in which to create them, would be awesome as well.

Hourglasses are one of the crafts. Just order a dwarf to make crafts and he'll eventually make an hourglass.

Both is correct. Stone hourglass in the craftsdwarf (make rock crafts), or metal from the metalsmiths forge.
