How do I exchange my hard earned loot into cash? I've figured out to either exchange it for other goods, or have the shopkeeper owe me money. Shopkeepers have plenty of coins, why can't I "buy" them?

once he has bought your stuff for cash, check around at the table or chest or something at the back of the shop, there should be coins there, yours are the ones with out the $ sign.

Edit-
Remember, not all coins are worth the same so you may get less coins then he owes you but it should still be worth the same amount.
