Gen 1 and 2 same as humans, they look more like 'stealers than like the host.

Gen 3 the pronounced chitin ridge between the eyes, occasional 'stealer like arm or leg and bulbous cranium.

Gen 4 all that's left to go on is the bulbous cranium and slightly pallid skin really.

I'm curious as to how a tank would evolve. Would it climb out of the primordial ooze wiggling it's track-nubs, feeding on smaller jeeps before crawling onto the shore having evolved proper treds?
My ship exploded midflight, but all the shrapnel totally landed on Alpha Centauri before anyone else did.  Bow before me world leaders!

I guess the only real question is why they haven't followed the genecult rulebook and begun disrupting operations.

The genestealer cults are attacked and eaten by Hive Fleets too.
Albeit it seems that upgrading the civilization is not their usual modus operandi, they might be genestealers gone wrong. Maybe Tau react differently to them?

You are probably thinking of the Zoats.

At any rate, I wonder what genestealer eldar would be like. In appearance, I guess they'd be more or less like human 'stealer, but would every single one of them be a psyker?

I like that the Kroot are literally gene-stealers.  Arguably more than actually genestealers, who are more gene-infectors...
Though I think I vaguely recall lore that some breeds were based on stolen SM geneseed...
But maybe I'm thinking of Starcraft :P  Where the various breeds were just species that had been genetically assimilated, linked to the overmind, and somewhat improved.

isn't that what zoanthropes came from? was from eldar DNA?

Old fluff said that zoanthropes were made after the Tyranid fleets consumed Eldar.

Eldar Genestealer hybrids would be a completely different thing.

Eldar are the hardest of all races to infect, even harder than marines, though with marines there's no payoff, because they can sense the infected's psychic aura changing and respond. In theory an Eldar-hybrid would be insanely agile and incredibly potent in telepathy.
