Are the angel soldiers procedurally generated like demons? I have been working on getting 4-5 angel soldiers to be able to invade rarely once you reach 120 dwarves and 1,000,000 wealth, which is late game stats.

The vault guardians are generated, yes. I actually have no idea as to whether it is possible to make custom vault guardians.

Though you could just make an entity with 'angel'-like creatures.

Hm... Ohwell. If I can find the part of the RAWs that handle generated creatures, I've found the demons before, I could take some and make them standard creatures, or even a race. Angel caravan anyone?

How would I do this whole "Caste population ratio" thing so that there are a certain number of seperate creatures in the same entity?

Separate creatures? You don't. Entities consist of a single creature.
You can define a single creature to be castes that vary biologically drastically, but they'll be able to crossbreed if given the requisite genders (and they should be) and they can give birth to any caste.

After that's all said and done, you just give them a [POP_RATIO:X] tag. Each child born has an X in (sum of all castes' Xs) chance of being in the caste with the given X.

Accidentally made over 5000 copper maces once. I have no idea how that happened.

GENERATION 29:
The first time you see this, copy it into your signature on any forum and add 1 to the generation. Social experiment.
