It depends.  Griffons have "hands", so that's easy for them.  Ponies are less simple, but I usually only assign a single melee weapon and no shield to earth ponies and pegasi because of how awkward it is to imagine them using both.  It's only really possible because DF lets them wield multiple things in one grasper anyway, and their mouth is their only grasper.  I figure they just pick up the sword hilt in their mouth, which is probably specially designed for this purpose.  Unicorns do that and hold the shield in their magic, although in DF it frequently goes the other way around with them holding the shield in their mouth and sword in their magic...

Anyways, the specifics I have for my pony are, at least whenever migrants come:

Female
Unicorn or Pegasus
Having at least some military skill in either a polearm skill, or just in the sword skill.
Single.

Glad to see we've got some more takers.  I've more or less got everything in order on my end, and I'm mostly waiting for DFHack to update before I can start anything.  Wouldn't want griffons laying eggs that hatch into ponies.  :)

Maybe if DF supported hybrids like that.  Since it doesn't and I don't want to go to the trouble of adding in hybrid castes that I'll have to filter out of migrants and normal births, no hippogriffs I'm afraid.   :)

A quick update: since DFHack works with .40.24 now, I'm getting everything finalized.  Expect the fort to show up within a couple of days.
