I have grabbed her and smashed and pinched her eye, hacked at it with a long sword and dagger, let her heal, done it again, did the other eye, then grabbed her with dfusion and she is totally blind but her eyes still show up.

Actually, I stand corrected, I'm not sure how you would manage to do this outside of gm-editor, but by going in and actually removing the eye manually:

If you remove the last eye does it no longer show up?

Incidentally I totally have the urge to switch the Champion tile to one of the adventurer classes and make a goblin then remove their left eye manually.

I've got it. The eyes change according to how many eyes the creature is supposed to have. I bet a Cyclops would show up as an apostrophe, too.

I don't think it could do multi-tile, even for entities out of view range.

Could you stop entry to your fortress by making a 1 tile chokepoint? Hm.
