Sure! A compiled list of resources. The most important one is the Basic Rules, in which WOTC released four races and classes for free.

Yes.
To be more specific, the year is currently 1482, and the Hospitallers control Rhodes, among other neighboring islands, which they seized from the Ottoman Empire. They repulsed an invasion by the Ottomans two years prior.

Going to not be as active for a while due to moving into a new house. Please be patient as I have been thinking on my character. I've decided that following a falling out with her family she decided that she is the rider of the red horse and as such must purge the wicked.

That's totally fine, and the concept sounds good. That said, I'm trying to figure out how a human, who are this world's equivalency to Moors or Middle Eastern, is a noble in Castile, a Christian nation.

Well, obviously there was a complicated string of alliances and some banishing involved and, well, obviously you can't just stop being a noble when you go to a new country.

Big question I don't see addressed, btw.

Is there magic in this setting? I know the answer is probably yes, but I want to make sure since you are going into a more realistic (relatively) setting.

Btw, what do you think Russia could be in this setting? I'm thinking Shifter might be good-it would put the somewhere between the Siberian/Mongolian lineage (Centaurs, of course :P) that they roughly have now.

It's actually a pretty exciting time in history. Russia was doing great under Ivan the 3rd, making that huge empire of theirs. I.e, conquering everyone. The year Hell March was first composed, I believe.
