Generally I have the TV on as background noise.  In the pretty-good chance that there's just nothing worth watching, I'm blasting Cannibal Corpse, Sepletura, Blood Red Throne, Korpakalani ...

I frequently listen to Bjorn Lynne's fantasy/medieval music when playing DF and other roguelikes.  You can listen to midi versions of the music here:

Try a few from the first column.  It seems to fit Dwarf Fortress nicely.  Beware the Quicktime music player, though; Quicktime doesn't appear to handle some of the songs correctly on my system.

I usually listen to song_game.ogg in WinAMP, sometimes I listen to stuff from my collection if it's a low-CPU-usage file (only about 1,500 of my ~8000 songs are MP3s, the rest are various videogame formats :P).

Pretty much any doom metal, though I find the funeral and drone subgenres particularly fitting for DF. Skepticism, Thergothon, Ahab, Wormphlegm, Khanate, Burning Witch and Sunn O))) to name a few bands.

L's theme from the Death Note anime.

There's no better thinky music, and I always need more thinky while plotting maximum-path-efficiency layouts for my bedrooms and calculating the optimal mix of serrated disks and spiked balls in my goblin death traps.

That, and anything else that strikes my fancy. I have a tendency to load a bunch of random music videos from YouTube and play them randomly.

Lately it has mostly been my country / blues station on Pandora.  So Waylon Jennings, Johnny Cash, Willie Nelson and BB King in the main.

I find the various metal offerings (Particularly Maiden and Dio) a lot more suitable for WoW; they just don't fit the pace of DF in my opinion.

Well, there's the already-mentioned Wagner and the Diablo II themes (I find the tracks "Fortress" and "Siege" particularly appropriate for this game, and does anybody know where I can find the lyrics to "Harem"?).  Some other entries in my DF playlist:

Most of the Mercenaries soundtrack.
The Iron Man soundtrack (the tracks with the "clang" sound are especially appropriate for overseeing dwarven workshops, particularly "Mark I").
In the Halls of the Mountain King, obviously.
The "Anvil Chorus" is also an obvious entry.
Bill Brown's music is freely downloadable off his site, much like Matt Uelmen, he's done a lot of game music and I particularly like USA 1 and USA 8 from the Command & Conquer Generals soundtrack.
I recently went through the nightmare of extracting the audio files from my Warcraft II disc so that I could listen to those.
Dire Straits's Telegraph Road is perfect for this game, minus the part about the telegraph.

More entries will be edited into this post as I think of them.

You mention Matt Uelmen. I like the Diablo 2 tracks myself. My favorite tracks are "Ice" and "Desert." All of the Lord of Destruction tracks are great. Fortress is LoD.

I like ambient beats, downtempo jazz and lounge music when I'm playing Fortress Mode.
