we are competent, but aren't pushing much on the optimization side.

So, seems likewe have support arcane and fighty divine...
Most roles are filled, then? Maybe I should just make something I would find interesting...hmmm.

What's the level of optimization, by the way? Will I need to go find guided or just not be dumb?

Non-dumb ought to be sufficient, but we've got reasonable optimization going as well (I did pick my spells rather carefully, and the paladin is built for maximum charging damage and such). It's easy to optimize because the campaign is undead-focused for the most part, so getting, say, a Holy weapon is kind of a no-brainer for the most part.

Trying to build a util caster when you have such limited spells tends to not work so well :V

I think I'll be ranger. Favored Enemy should do most of the heavy lifting there, and besides, almost everything is a wilderness now.

So it was like a binary search, except the question is "Has the input been brutally murdered?", and it only ever returns True.

The spiders retreated much faster than i expected, after my 104 damage blow. They are machines, I thought they are built explicitly to lack a survival instinct.

They do speak Abyssal, are explicitly evil and behave intelligently (such as running away on our first encounter), so I think they just look like menacing spider tanks and are actually something else that's bound to a menacing spider tank. Or maybe they're something like clockwork horrors, fiendish construct-esque things that work on their own for the most part.

Also their party tank got wrecked by something that outputs up to 104 damage per turn, that's a good sign that Dimension Dooring right the hell out of there is a sensible idea.

Question: What sort of things are still alive/around other than undead, outside the walls?

Trees and grass are still alive ( although most plants which require lots of sunlight are likely suffering or dead.

I faintly remember something about some wildlife still being around, but can't remember specifics.

We did run into a zombie elephant. Not alive at that moment, but considering it still had flesh it definitely became undead not very long ago. There's also Mosith's tribe of lizardmen, mentioned but not directly seen, and no doubt other settlements as well. Constructs can be found still lingering about, and slimes and oozes seem to be as healthy and unnatural as ever.
