I'd be interested. Would all dwarves have to have cheesemaking permitted, or just most?

Would cheesemaker immigrants be made into a new class of noble, skill irregardless?

It would certainly be a rule to buy all milk-producing animals from the caravans.

I think, that we could make it so as to be a fortress where we need to make as much cheese as possible, and then feed it to the nobles.
Cheesemaker immigrants would have to stay cheesemakers at all costs.
Yes. We would NEED to buy the milk producers immedietely.

So the fortress would be geared to produce the greatest amount of cheese... This would be an interesting multi-fort challenge as well, to see which Player could produce and store the greatest amount of cheese each year of play.  If each Player chose a different civ, nobody would be able to "steal" cheesemakers from the last one to play, and if each Player saved their fort and posted that save before retiring at the end of their year, then the total cheese amount would be able to be independently verified by anyone who chose to download that save (keeping honest people honest).

Truthfully, it would be interesting to have three contests going: one for sheer total mass of stored cheese a second for the variety of different cheeses in storage and a third for "most expensive barrel of cheese". (Gem encrusted adamantium barrels of Masterwork cheeses... now that's a noble goal!)

To make the challenge even more interesting, there could be "quests" set up by each Player who isn't taking a turn for adventurer-mode shenanegans between each turn.  Have the adventurer turns last 1 RL day and 1 in-game day to limit the amount of total carnage or destruction capable, and when that year's quests are finished, have the next Player take their one-year turn (1 week in RL, or until the following weekend, whichever is soonest.)

So not a succession fort? One wouldn't actually be able to make much cheese in a year outside of embark and caravans... I mean, year long speedrun and efficiency contests might be fun though, if a bit more repetitive and insular.
I wonder if maximum milk animal embark would even be more productive than spending most of the embark points on milk or cheese.

I like the idea of  chesemaker nobles though. Making new kinds of noble is actually pretty easy, in the raws, and constant mandating might be funny.

Bob, if you want to take this over, be my guest. Your idea seems like a pretty good one. We could all have cheesemaker nobles as well, though. Being the ones who eat the cheese.

Huh, this is a somewhat interesting idea.
It is late here so I will randomly throw out some ideas.

Cheese vault -> This is your new adamantine.
Only food produced is cheese and cheese derivatives. The most expensive cheese(s) produced that year will be sealed away in a vault. The "Big" cheese must stand alone.
Only cheese and the things that make cheese are acceptable (milk, milk producing animals).
Use yellow colored rock for everything. Gold? acceptable. Orthoclase and Gypsum everything please.

Cheesemaker nobles mandate a cheese table! Of course, cheesemaker nobles accept no other labors other than cheese making. Of course, the craft of cheese making is insular, those who do not have cheesemaking enabled may not enable cheesemaking (thus ensuring not everyone joins the noble cheesemaker class)

Cheese for the Cheese God! Milk for the Milk Bucket!

As much as possible, combat should also be cheese-based. Flying cheese, thrown cheese, dropped cheese, etc. Fortresses should also be ranked by the number of cheese-related deaths incurred during each year of play.

     And please alter the raws so that trap components may be made of Cheese......I will be a mechanic whose life's goal will be working toward introducing a spiked cheese ball to a goblin's face.
