I think its important to take into account how easy it is to learn most skills.  dodging is hard to learn without risking your life. (and you cant learn reading unless you start with some already)

Re:starting with fighter, certainly not fighter is almost the #1 easiest skill to train
Weapon skill isnt as easy but its not too hard if you never get hit you can take plenty of tries, if you're worried about starting with a specific weapon you can loot any weapon at higher quality from a local castle
Edit - i noticed observer as an option, i beg of you not to waste in any points in that because that is the #1 easiest skill to train
