How can i remove dwarf's profession name??

For example,

Goden Kalanalath, Steel golem metalsmith

Athel Nilliar, peasant



Can i remove those profession name?

I don't believe you can.

You can modify how a nickname is displayed (edit d_init.txt) or create custom professions similar to how you set a nickname ('V'iew Unit - 'Z' Status - 'Y' Customise) but I'm fairly sure that's it.

You can probably set the profession name to an empty space (haven't tried it, but pretty sure it will work).  From the view of the dwarf, press 'y' for customize and then 'p' for profession to change it.
