Can you create empty spaces?

I wanted to know if it's possible to delete, for example, a ground tile where dwarves can walk and just make it into an empty space.

That depends on precisely what you're asking.  You can channel a hole in the ground (channeling is under the dig menu), but that only opens up space to the z-level below it, and unless you remove the new ramps dwarves will still be able to walk into and out of the hole you just channeled.

try dfhack's tiletypes. paint mat stone or soil paint shape none or empty. maybe you can't actually chose empty so check help when in tiletypes (im not near my pc sry)

Digging a channel removes whole tile. You can create large empty spaces by channeling one layer at time from top to bottom.
