Any ones that are really really good at the game and are a total try hard? As well as ones that are doing a series with an interesting goal?

You should take a look at Kruggsmash, he does pretty good forts with excellent presentation, even including hand-drawn art on occassion (on paper with markers/pencils to be specific; he probably goes through a ton of the things given the detail some of them have,) and features fan art relevant to a given fortress or previous stories.

I just finished watching the last episode of his most current series. I think he illustrates things a bit too much for this series. And he does things a bit too slow. But otherwise hes good. Anyone else?

IMO this isnt really a game that is best enjoyed by watching live gameplay. Too many things go on quickly, and its easy to miss stuff. When I play, i spend ALOT of time in pause. and if you are viewing the game with no control and likely on a tileset you are not familiar with, it can be hard to understand the game that's going on. There's my two cents anyway.

Depends heavily on what you're looking for.
Dastactics playstyle is methodical and well planned. I really like it, but when it becomes too dense for me I switch to others like:

Civillain https://www.youtube.com/watch?v=LLM8o-K5IzU&list=PLck3mrH3bNedxCrtiCzMLCQ6_WBI93fBk is whimsical and hilarious, makes silly great plans and loses track of them eventually, resulting in funny disasters. She's so dismissive of the dwarves' lives she names them in incremental versions ("oh, Gongo II died in a mining accident. Congratulations, peasant, you're now Gongo III, get a pick from somewhere"). I really can relate to that.

Kruggsmash https://www.youtube.com/user/kruggsmash is great, he heavily edits his episodes to avoid waiting times, dives into backstory and dwarven personality just enough to get you involved with the characters, and his illustrations are perfect for the tone (I'm a patron so I'm heavily biased).

Birdybot https://www.youtube.com/channel/UCvyNIESj7eKbkIdarZL-0ww/playlists is upbeat and stylish, she makes beautiful fortress layouts using DFHack and maybe proxies and also goes into Legends viewer enough to keep you involved.

The audio quality doesnt bother me at all. Though he shoulld really spend $25-$50 on a blue snowball.
