Nope, statues are hardcoded. You could make a tool, or use a dfhack script (search the forum for taxidermy) to force them to create a figurine or statue of the creature used in the reaction. Or make a custom inorganic for each fish type, to create a statue from that. "This is a chalk statue" could just as well be a "this is a magnificent salmon trophy statue" ;)

Based on this, I am very tempted to make a trophy tool (which could be displayed on pedestals and in display cases) and a material for each fish. i.e. hundreds of materials and hundreds of reactions lol

This would clog up the entity raw and may take awhile though...

Technically you should be able to just use creature_mat:creature_id:bone for example. That way you already have the mats, and the word trophy comes from your tool.

What is the "creature_mat" there and where in the reaction does that go? Would that make a salmon bone trophy?

This is what I was thinking I would have to do:

Couldn't you also tell the product to use the reagent material instead of CREATURE_MAT:fe_BASS_ROCK, then you could make one reaction to mount all fish or would that not work? Something like;

I'll try these out when I get a chance, but won't the product just be "bone trophy"? Or will it make a "rock bass bone trophy "?

Maybe I can add reaction classes for the subtypes. So it will at least narrow it down to mount bass, mount salmon, etc

I am considering making the following vermin (15) that can only be caught in temperature biomes with "capture live fish". Thoughts? Should this be included or is this past the scope of this fishing mod?

I think at this point, you might as well add all the vermin you can think of. There are a lot of options with vermin colonies, byproducts, gnaw-numbers, etc.

Anything from Carmine die from insects, silk worms, plaques of grasshoppers, venomous bites, all kinds of cute rodents and lizards as pets...

That is a lot of possibility. After I add all of the fish, Ill think about expanding this (or creating a supplemental mod) for all vermin.

I finally got around to spending a few hours on all of these reactions, but unfortunately, none of them are working lol

The trophy reaction successfully sends a dwarf to the workshop with a raw fish, but after the raw fish is consumed, nothing is produced.
