creature_standard.txt
Find the dwarves (they're at the top)
Add the tags.
[NO_EAT]
[NO_DRINK]

Now, you can probably remove clothes from the Dwarf entity (entity_default.txt, at the top again) but I think they still get bad thoughts from being naked. There's probably a workaround someone can post. (I recall my hobbits being upset at not having shoes. Silly little fellas).
