Milk, Blood, Meat, etc... How to specify in cook workshop

I have an old fortress.
I have a cow -> Milk....
I have a hen -> egg...
Cave wheat give me Flour when the river flow active my waterwheel
and I have sugar.....

So PAN CAKES.......
ho no? why?

So, I a lavish meal in the Kitchen, I wil choose my ingredient in the workshop details [atl+a], I can select Sugar [item -> powder, material -> Plant -> Sweet Pod -> Sugar]
But How can I select Milk?
I have Stadardized Milk Mod...

Same probleme with Meat, Blood.
