9 is a nice number, but you can work with any number if the balance feels right.  The downside of 7 is that Mafia will feel particularly stronger, and so the Town will need to be strong to compensate or the Mafia weaker.

I have ideas that might work.

I think seven would be perfectly ok for a lighthearted BYOR, especially as you have a lot of freedom with the roles.
