How do I modify [MATERIAL]?

Other elements can be easily modified
without modifying the original file
by using the SELECT or CUT commands,
but MATERIAL does not seem to have CUT and SELECT working.

MATERIAL isn't a thing. There's INORGANIC materials, which you can edit through cut and select, and when you select a creature, you can select but not cut materials in the creature. There's also MATERIAL_TEMPLATE, but I'm pretty sure you can't cut or select those.

I don't know what exactly your trying to do with a material you can't select/ cut them, but you can redefine them.
