To replace coal - remove the [fuel] tag, and simply add an reactant that is necessary for every reaction. Basicly your candy canes. the [Fuel] tag basicly saves space so you dont have to type the whole thing out,

Well, my candy cane trees will still be producing logs, so I'm going to try that out for now. It's going to need a lot of balancing, though, since I'll have to work out which toppings should go to which regions, etc. I'll have to modify the basic chocolates and cocoa to appear everywhere, at the very least. Gems are also very useless at this point, so they've been removed entirely to save some effort.

Since sand is now sugar, glass is now some sort of sugar confection- I dont know if that is in the raws though.

Make Chocolate more a mountainous region substances with more and more pure chocolates from milk to dark lower you dig. Steel should be white chocolate as it is a partial chocolate that uses impurities for flavor. Adamantine should be something cool. For flux you can have marsh mellows....Peeps.

For regions - do it based on tempurature. In colder regions have more chocolate and marshmellows. In warm have cakes and cookies.
