Is there any way to add z-levels w/o messing your saves up?? or any way at all? I built a giant pyramid as to honor my most powerful dwarf but hit the roof before i could finish it, help please.  Also, using the newest unmodded DF version.

The short answer : No.
The long answer: really, really no.

As the game is now, and will be for the foreseeable future, the number of layers is eternal. There have been some discussions of making the numbers adjustable, but it's not likely soon.

There is one way, but it requires you to start the whole thing over.  Just dig into the ground a few levels and put the base of the pyramid down there.

Your best bet would be to go to somewhere with a large number of cliffs.
I made a 69 z-level tower, so there's really no limit to the number of levels you can have if you have enough cliffs.
