when a creature is a "war" something, does it affect it's stats or something, or does it only imply the use of the animal at a worktask or guardian

I've been told War animals do double damage, while Hunting animals can "ambush"and sneak.

Yes. War animals get a damage bonus, while Hunting animals get a bonus to their Ambushing skill (they can get closer to enemies before being noticed).

Once you assign a "work animal" to a Dwarf, it will follow the Dwarf around and attack anything nearby, so it could be used as an assistant to a Soldier or Hunter, or possibly as a guardian to a Woodcutter or some other dwarf that must constantly be in some potentially dangerous area.

regardless, the slime shooter will be completed, come hell or high water, which are both entirely plausible setbacks at this point.

Don't hunting animals get a small speed bonus?
