That'd be definitely cool. Moreover, we wouldn't need to create each and every job in the fortress, leading to poor soap makers to die in misery. Let's give them a chance : if the baron likes soap, their fortune is made.

Along the "hireable workshops" line, it occurred to me that if your engravers were sitting around idle, you could build them an engraver's studio (or something) and richer dwarves could hire them to smooth or engrave their rooms as well. Or chisel a rock portrait. That would be cool. Okay, maybe not.

some people leave walls unengraved because after a while, all engravings are masterwork == unhappy thoughts when the room is expanded.

AI-based economy is a great idea.  The dwarves handle eating, drinking, sleeping, and clothes shopping, adding in automated furniture buying/selling/reselling sounds cool.  It would support the vision of independent dwarves.
