Depth is moot - it's the kind of stone layer and raw chance that determin what you'll find.

I can't speak to trends, but I've mined out a copper vein a z level above my aquifer.

You CAN find cassiterite (tin), gold and platinum in a soil layer, but your chances of finding it are slim. Very slim. To know which ores are where, have a look at the wiki.

So long as the layer in question is a ore-bearing rock, you can find them on any z-level. I know I've found tetrahedrite and hematite on the lowest level of a particular map and probably more than that, but I don't recall what they would be right now.

A Non-Dwarf's Guide To Rock

Find what ores can exist in each layer. You will be hard pressed to find ores in any soil layer(though I have seen some, possibly expanding beyond rock into the soil). You can also see hwo the ores are found(clusters, veins) and look for the appropriate thing.
