I pronounce it er'st.  In practice it'll sound like one syllable.  More or less, think of it like the "irst" in "thirst".

I think the yoo-rist or uh-rist variants are peculiar deviations specific for english speakers (similiar to the awful way you pronounce latin or greek names).  :P I'd say most speakers from the rest of the world (or at least Europe) would simply say /urist/ (oo-rist).

Seems logical.
I know, if I'd try to read any other language than those I already know, I'd be inclined to pronounce them in the way I'm already used to.

I must say that I really like both pronunciations now, You-rist and Er-rist. :D
