You don't have to mod if you really don't want to, but moderating a game would be an excellent learning experience; it makes you really think about how the different roles interact, and how players think when faced with different situations and levels of knowledge. It also uses a wholly different skillset, so you don't need to worry even if you feel you need more practice on the player side of things.

how many are required? How does it differ from regular Mafia?

sounds vaguely like kingmaker?

most open Mafia games, wherein you know the setup beforehand, can be adjusted up and down on the twos.  and sometimes ones.

kind of like how sports brakets can be made with 2/4/8/16/32 players easily, but its slightly harder to make a 6 person bracket without complicating the formula.  and a five person tourney requires still more tweaking tonwork.
