Nobody mentioned an egg salad sandwich.

Hard-boil egg, shell, put in bowl with a tablespoon on mayonnaise, and chop it up with a spoon. Add black pepper and a tiny bit of salt to mixture. Aim for egg pieces no larger than 1 cm across. Spread on bread and toss on some cayenne. Add second bread. Lift to mouth. Open mouth. Move sandwich into mouth (alternately, move mouth onto sandwich). Close mouth, removing a small section of sandwich. Masticate. Swallow. Repeat until sandwich is consumed.

Mostly because for Breakfast I don't like a lot of preperation.

Also for Egg Salad I HIGHLY suggest Dijon Mustard! Though I love the stuff!

I've had a Pickle and Dijon Egg Salad, it was delicious.

No one has said omelette yet?! Take one egg, add half an eggshell of milk, and a handful of grated cheese. Throw in some chives, pepper and a little paprika, whip together with a fork, and poor into a hot oiled fry pan. Once it's half cooked (top still a little runny, but bottom is firm) sprinkle with desired topping, e.g. chopped salami/ham, mushrooms, etc, and fold one half over the other. Serve & enjoy.

Should've gone with my idea. Turn it into a hand grenade and you can mug people with it. Steal all the delicious breakfasts of the world.

You could just save the egg until you get another carton. Then you'll be able to make a three egg omlette and still end up using all of them evenly.
