Also, I've been having meat rot in my butchery and kitchen.  Is this just from having too much work so that it doesn't get stored in barrels quickly enough (I have a bunch of barrels)?
Build more food stockpile areas. Dwarves tend to be a little lazy about storing food in barrels at times so simply increasing the size of your stockpiles can help to cut down on rotting food immensely. If you ever encounter food rotting in your workshops you need more of one of two things: stockpile space or dwarf labor.
