Is there a difference in the cars that you can buy/steal aside from price?

Sports cars are faster than other cars, which helps in getaways (if you have high driving skill, if not, it helps you crash and die) and uhh, I think the other thing is that more expensive cars like sports cars etc have alarm systems, which ties in to the difficulty.

That's all conjecture though, I don't have any stats sourceode to throw at you, just, my experience with the game.

A couple more questions:

1)Does your car stealing habits effect which cars draw police more quickly?

2) If I set something on fire, does the fire injure the people I haven't encountered yet or do I have to be standing in the fire with enemies for them to get hurt by it?

1) Nope.

2) I'm not sure if fire hurts the enemies that show up on the minimap, but other enemies are spawned only during encounters, so they are not harmed by the fire.

How often do you see an unattended taxicab on the street? They're generally either being driven or in a locked garage somewhere. Despite the difficulty of finding one, they aren't better than other cars.

New York, taxis park outside for the night.

At least down by Flushing, Main St...

I still go for taxis anyways cause of the short name and the 'I stole this' factor...

my suggestion is that you could make it so that you can blend in with other taxis when your being chased to offset the diffculty

This has been bugging me for awhile, whenever you're given the choice of talking to multiple people, you'll see thing like 20s, 50s etc after their names. Is that their age?
