Maybe if you leave your cheese in a room for just the right amount of time, it grows that blue fungus and becomes more valuable.

Exactly. The world of cheese is a surprisingly large one, and would surely have a lot of potential for fun. Not necessarily the kind where the dwarf eats the strange red, furry fungus on his strong cheddar, goes into a fel mood and makes a mug out of eyeballs.

EDIT: by the way, would it be possible to mod cheese into a metal/economic material?
if so, my next mega project will be a cheese fortress with an army equiped with cheese weapons

DF's initial learning curve is more like a learning cliff, essentially the game shoves you off and expects you learn how to fly before you hit the ground.

Or, make elven cheese, and use it to feed the breeding elves you keep locked up.
Or cook it along with some elven blood into bloody elven cheese pie.
