Great, we can milk cows/whatever now. But it's worth 1 dwarfbuck and cheese is worth 10 dwarfbucks isn't it? I guess you could ditch the anvil in the beginning, buy 100 milk, then make 100 cheese for a 900 dwarfbuck profit.

The same way you can milk a pig. Unless you have a special aparture, you can suck the milk and spit it in container. Have fun.

I've verified you can only milk an animal every month or possibly even season. I am actually a bit disappointed. The 'recharge' rate seems low, and I have no idea how many cows it will require for me to keep a milker busy.

On the plus side? Dwarves drag a chained cow to the workshop, milk it, then PUT IT BACK ON THE CHAIN. I have little cow pens now of eight cows around a bull pumping out calves, beef and cheese. I can't wait for someone to add sheep wool!

It is also possible to milk donkeys and horses. It also follows that you can now have donkey cheese and horse cheese.
