What have people managed to obtain from the various extract options in the game? So far, I haven't been able to locate extractable items.

Farmer's Workshop

Process Plants - Pig Tails -> Pig Tail Thread + Seeds
Process to Bag - Quarry Bush -> Quarry Bush Leaves [Cookable] [Needs Bag]
Process to Barrel - Sweet Pod -> Dwarven Syrup [Cookable] [Needs Barrell]
Process to Vial -

Procces to [Container] yields 5 of the item in question.

Fishery

Extract from Fish - ?

Buchery

Extract from Animal - Live Cave Spider -> Cave Spider Venom [Needs Vial]

Extract from Animal yields 5 of the item in question.

Still

Extract from Plant - Kobold Bulb -> Gnomeblight [Needs Vial]

Extract from Plant yields 5 of the item in question.

Barrel is sweet pod to syrup. Bag is quarry bush (one of the plants you gather from the river) to quarry bush leaves.

On a related subject: can you actually do anything with syrup and quarry bush leaves? I assume you can't eat them straight up, but my kitchens don't seem to be grabbing any to add to meals. I just tried turning off everything except syrup and quarry leaves, but haven't seen any results yet (the cooks seem to be off eating and sleeping right now).

Nevermind, just finally spotted a cook using some quarry bush leaves. Which is awesome, because you get 5 leaves from each quarry bush, so if you go through a couple of extra steps (which you can do during winter, when you can't grow anything else anyhow) you end up with 5 times as much food than other crops. Except sweet pods, which also seem to get 5x yield if you make them into syrup.

[EDIT] Except that my syrup barrels are just sitting there in the workshop for months now... they don't even have a task to put them in the food pile...

Was me who posted about the Gnomeblight. I got it out of Kobold Bulb which can be gathered outside. You need an empty glass vial, too.I haven't found anything to actually do with it, but it's quite valuable: you get 5 units of Gnomeblight out of one Kobold Bulb and each has a base price of 100$.

In my current game I was able to extract Cave Spider Venom out of a caught live cave spider at the butcher's shop. Needs again an empty glass vial and yields 5 units venom. I don't have a bookkeeper yet, so no idea how expensive it is. (The spider btw doesn't survive the extraction)

I would think that caught cave spiders would be better put to work producing silk...  hrm, can you do that somehow?

No, syrup doesn't get turned into sugar. Sweet pods can be turned into sugar at the mill or syrup at the farmer's workshop. Syrup does work as cookable food (it just took my dwarves forever to get around to moving it to the stockpile), which means that sugar is for suckers since you get 5 times as much food from syrup.
