digging though aquifer in freezing climate

I was bored and decided to try this for the first time.  I channeled out down to the aquifer level, but channeling into the aquifer level itself creates a level of 'empty space' instead of a frozen ice floor, and then one z below (inside the aquifer layer), a layer of damp ice wall.

I then tried a new tactic, which is a dug a tunnel down the the aquifer, then dug a room out above it.  I then channeled into the aquifer to produce water.  From there i dug out and removed the layers above to expose the water to the air.  This seemed to work the best as it created a square of ice surrounded by a single square of 'empty space' like before.  From there i built a bridge onto the ice and dug into that, but i planned poorly and mucked the digging down part and lost my miners to insta freeze. 

Is my second tactic the right one?
