Right click in steam, properties, "BETAS".  Pretty sure achievements won't work, of course.  And I haven't tested whether this actually works, but...  The options are there (2.04, 2.1.6, 2.2.1, 1.111)

Possibly a couple of provinces that are in modern China.
A couple, yes. Like most of Xinjiang (spelling) and  Tibet. Of course those weren't really part of China at the time. (Ironically Inner Mongolia is right out)

Tibet is not in for this expansion. I do hope they do a Tibet expansion since the Tibetan Empire was kind of a big deal. They are just adding provinces to the Tarim Basin, which is somehow north of India thanks to the warped projection they are using (I am guessing they'll have to fix that when they do China, otherwise we'll have a horizontal Korea).

Oh, sorry, I have apparently mistaken a wasteland marker for a country. Or something. It does look like it's just empty space now.
Also, the timeline of CK2 starts during the decline and dissolution of Tibetan Empire (still, it might be fun to try and keep it together), followed by Chinese and finally Mongol conquests.
