I'm hardly one who follows the FDA diet... I've had dairy products that were open and a month past their marked expiration date, I will eat food regardless of whether or not some obnoxious fly has landed on it or not, and I have been known to leave leftovers sitting out (or at least unrefridgerated with some sort of lid over so it doesn't completely dry out) overnight to eat them in the morning.

That said, safety or no, there's a moral obligation here when you're serving meat that is presented as and expected to be clean.

It's like washing your hands after taking a piss. Under most circumstances, nobody is going to die or become mortally ill just because you shook their hand while having a couple dried droplets of urine on your skin. But there's a kind of social obligation to wash them off so that you can proffer a clean hand that nobody needs to think about.

I worked on McDonal's in my youth (I'm 31 btw), and we were told any piece of food raw or cooked, or things like burger boxes and wrap papers, that touched any surface not meant to be touched by them, at any time of the process, for any length of time was considered waste immediately. They rather face wasted materials than a lawsuit. Mind that the floors and all surface on the kitchen were keep insanely clean and still anything that fell down was thrown into the garbage with fury. And all this in a banana republic were a lot of laws are so lax they barely exists at all and if you have any issues they can be solved with some bribe. Don't imagine how they enforce all these rules on a place were laws are actually applied.

I'm curious as to how a tank would evolve. Would it climb out of the primordial ooze wiggling it's track-nubs, feeding on smaller jeeps before crawling onto the shore having evolved proper treds?

We got guys who come over, look the place up and down and check of the old paperwork. Which is being a bit ingenuous, but we do have health inspectors. And aye. While I highly suspect the FDA won't approve, it's more that I want some sort of authority justifying my opinion. Especially since I got REALLY pissed, and none of the people who should have verified that anger did. It honestly wasn't wise, but the dude was fucking pissing me off all day anyways.

Part of it is (at least from my experience working at Dominoes) is the fact that its a franchise.  If the restaurant isn't up to franchise standards you lose the franchise rights.  That includes cleanliness and overall appearance.

yea no food is serious business; and proper high end restaurants/stores will not hesitate to throw out hundreds of dollars over a case of even potential or theoretical cross-contamination.  which touching the floor is.

Ive seen meat stacked, in its boxes, on top of produce, and the produce all flew away. hundreds of melons, just floating away.

That said, my current employers are a mix of 'throw away a hundred dollars a day or we get suspicious' and 'shit don't you dare use that 3bay sink. 2 are for the other department exclusively'.  assholes don't know what a 5 station sink is but will flip their lid over some slightly off-color food.

I'm a manager of a department, and it drives me crazy to not even control this basic thing...

I like my job and if I got paid only food and board as an entertainment consultant and gigolo on a cruise ship for gymnasts, I'd probably take it.

will not hesitate to throw out hundreds of dollars
Yeah, so about that.  I work in retail, in a store that has a grocery department but other departments as well.  We get most of our products from our own warehouses.  But we get food from another company.  As a result we use two different apps for inventory, one for food, one for everything else.  I don't work with the food at all.

Two months ago a manager for the grocery side of things told me about a computer problem they were having.  So apparently when they received the trucks with the food it wasn't updating the on-hand counts.  So the computer would be like, oh, you need frozen pizzas.  So the next truck has frozen pizzas.  But as far as the system is concerned we never actually got them.  So next time it sends more pizzas.  Forever.  The system is fully automatic.  This had been going on for a month.

Our store manager is, well he's an idiot in some ways.  He told the grocery people that we can't cancel trucks we can only turn them away, because canceling trucks looks very bad to corporate.  Unfortunately my store is very busy and miserable.  So, semi-predictably, one day the opening manager for that department called out and there was no one in the store with the authority to turn away the truck.  The result was that we unloaded some large amount of frozen food (at least an entire pallet, possible the whole truck, I don't remember) when our freezer was already full of duplicate items that had no empty locations.  We threw it all away.  Now we're allowed to cancel trucks.

This store manager is the same asshole who told us that we can't turn away customers or lock the doors until 11:59 PM, and we have to let them shop undisturbed.  Our store closes at midnight.  We've had an epidemic of cashiers calling out from closing shifts, I wonder why?

It depends on the staff as well. Once I went to a high end restaurant and all the staff was new. Among other gaffes they served us meat with maggots

The historical British knew how to deal with that, make maggots a feature, not a bug:

Quote
During his tour around Britain in the 1720s, the English writer, journalist and spy Daniel Defoe stopped off in the cheesemaking town of Stilton. He was served a plate of cheese with maggots around it so thick that a spoon had to be brought for him to eat them with. The cheese also contained smaller bugs called cheese mites.

Also, it's one of those interesting quirks, that around this time naturalists (scientists) had been believers in Spontaneous Generation for centuries, while the Church held that life only originated from previous life. Which just goes to show you shouldn't be too smug.

It was the stupid aged steak gimmick.  Someone fucked up badly while doing that, and then never bothered to check.

Definitely fucked up bad if flies got on your aged steak. 1688 was the date that the guy did the experiment with some muslin cloth to prevent maggots on meat. It's not rocket science to cover it.

they were morons. All the night was fuckup after fuckup. Right up until the end.

After "dinner" I asked if they had pu erh tea. They said yes. They proceeded to bring me regular black tea. Were actually surprised that I was able to tell the difference (THEY ARE COMPLETEDLY DIFFERENT THINGS. ITS LIKE ASKING FOR A BOILED EGG AND GETTING A POTATO OMELETTE. WHY LIE IN THE FIRST PLACE?)

The pharma rep actually footing the bill for the dinner  was livid
