I'm host, so I dunno if its slowing us down. However, you are lagging quite severely, which seems to be the cause of it.

So, in my single player game, I've got a train that I want to go to a station carrying grain and passengers, then unload everything and take more passengers. I'm using transfer to make it offload the grain, so another train can pick it up. However, it picks up all the grain it just offloaded! So how do I prevent this?

Apparently having the host's company go bankrupt causes the server crash. Be sure to avoid this if hosting a server.
