i've selected the dwarf to be an baron and pressed esc but he soent show as an noble he just keep being the mason

Eventually he will become a baron. Give it some time, and prepare his room or cavern excursion for him.

I found that sometimes nobles don't lose their jobs. For example, my legendary miner became a baron, and he still mines and does useful stuff, but all he needs is a special room. I haven't found any reason to not satisfy nobles' needs except for certain mandates.
